This salsa is one of my standbys. I love to have a bowl of pebre in the frig at all times because it is perfect to add to any dish––breakfast, lunch, dinner or a snack.
My dad started making salsa in his Peace Corps days in Chile and it was a staple in our house all my life.
It’s packed with dense nutrients so you get your veggies with every bite!
Pebre
Ingredients:
1 cup of chopped fresh cilantro leaves (coriander)
1/4 cup diced onion
1 clove garlic, minced
1 tablespoon chopped jalapeno pepper, fresh or pickled
1/8 cup lemon or lime juice
1/4 cup olive oil
1/2 teaspoon sea salt
Mix all ingredients together in a glass bowl.
Cover and let set for about an hour to help flavors meld.
Lasts for about a week in the refrigerator.
Variations:
Add pebre to diced tomatoes, watermelon, mango, or pineapple for other great taste treats.
