How do you find good snacks that are gluten-free and dairy free…and your friends will like them?
When you have celiac disease, it can be a bit of a challenge to find snacks that aren’t based around cheese and crackers.
This nut mix is usually a hit with my dinner guests, plus it is nice to have a quart jar on the snack shelf when the munchies hit.
Spiced Nut Mix
Ingredients:
1 cup each of walnuts, almonds, pecans
1 tablespoon coarsely chopped fresh rosemary (or ½ tablespoon dried)
¼ teaspoon cayenne pepper
2 teaspoons brown sugar
½ teaspoon sea salt
1 tablespoon melted butter (or substitute 1 tablespoon olive oil)
Toast nuts in oven for about 10 to 15 minutes at 350 degrees until golden brown.
Mix other ingredients together in small bowl. Pour over nuts and toss.
Let cool and eat. Place extra into jars.
