How this recipe was able to fly under the radar for so long, I do not know.
It’s so simple, and it was right under my nose.
I have experimented with making gluten-free cookies with all types of flours.
All the measuring, plus making sure that I had all the ingredients, made cookie-making into a chore instead of fun.
With this recipe, in twenty minutes or less, you can enjoy a warm cookie.
Easy Peanut Butter Cookies
Ingredients:
1 cup peanut butter (or other nut butter)
2 tablespoons sugar
1 egg
Preheat oven to 350 degrees.
Mix all the ingredients together until well blended.
Use parchment paper on your cookie sheet.
Roll dough into balls about the size of walnut. Place on cookie sheet.
Press flat to desired thickness with the palm of your hand.
Bake for about 12 minutes or longer if you desire a crisper cookie.
Note: I’ve used almond and macadamia nut butter to make this recipe with delicious results.
I’ve also left the sugar out and topped with a sprinkle of sea salt. Nice to serve with a glass of wine.
