One of the flavor treats I’ve found in my gluten-free adventure is pesto. This version is also dairy free which I’ve comed to prefer.
Before this recipe when I used a traditional recipe with Parmesean cheese, clean up could get tough, trying to scrape all the cheese residue off the dishes.
The beauty of this version is that you might not know what is missing…if you didn’t know.
Try it on gluten-free pasta, vegetable medleys, or on top of sliced fresh tomatoes. I think you’ll like it.
Hemp Basil Pesto
½ cup pine nuts or walnuts
¼ cup organic hempseed
1 garlic clove
1 ½ cups fresh basil leaves
2 tablespoons lemon juice
5 tablespoons olive oil
Salt and pepper to taste
Place all ingredients into food processor and blend until smooth.
Adjust salt and lemon juice to taste.
